Santa Baby was born out of the need to find my Christmas spirit.

I love Christmas; it is romantic, it is full of love, family and traditions. For me, much of this felt lost with loss of our home in February to a fire. With all our mementoes gone, I felt myself struggling to find where it all fit again. Having married my husband on December 13, we had a Christmas wedding. I loved every ounce of this day, and thought maybe it would help me recapture some memories and some of the missing spirit if you will. I’ve always loved the story “I Saw Mommy Kissing Santa Claus” and of course the song Santa Baby … the line about a ring!

So, I dove into the idea of recreating a love story about Santa kissing mommy, and of course the ring! Once the the scene was set, a beautiful tree farm was needed, and Blitzen Estate in Jasper, Ontario, fit the scene perfectly. The tree was decorated , the fire was lit, the table was set and Santa flew in from the North Pole to help us out.

We needed his suit to pull off the proposal. A beautiful bride was outfitted in a gorgeous gown by Sinders Bridal of Carleton Place, a vintage fur cape from Angelina Wrona of Merrickville complemented the whimsical romantic look, and the boots?  Oh, the boots! Shipped in from The House Of Elliot in the UK, they completed the entire ensemble. All we needed was the groom-to-be (disguised in Santa’s borrowed suit, of course) to pop the question and present the ring. A 6.74 carat hessonite garnet, surrounded by diamonds and set in rose gold, it had been lovingly crafted by Goldart Jewellery Studio of Ottawa.

The scene was set, the outdoor living room warm and cozy with a fire in the pot bellied stove burning, and the GypsyRose Bar serving up drinks prepared by TopShelf distillery to keep things festive. Flowers and greenery were everywhere with glorious pops of red to complement the ring. The invitations sent, the guests were soon to arrive to this surprise proposal party.

Then “Santa” arrived, dropped on bended knee, proposing to his lady with ring in hand. Little miss Olivia, spying Santa, couldn’t contain her excitement to catch Santa kissing her mommy. She rushed over to catch Santa in the act and spied the ring! ‘How exciting,’ she thought. ‘Mommy is marrying Santa … or is she? … Who is that in the trees? … Could it be?’ …

This sweet couple bravely broke tradition and changed their last names- taking on Adam’s last name Shirley, but adding Spencer before that in honour of his late grandfather. The couple actually met on an airplane on the way to Thailand as she was on a girls’ trip and he on a boys’. Want to celebrate the holiday season by welcoming guests as an almost-married couple? Here’s a hot recipe for Avocado Toast Pockets  that will earn raves!

A twist on avocado toast

The popular brunch staple gets a holiday appetizer makeover in this phyllo-crusted pocket version. The avocado toast is a delicious combo of creamy avocado, fresh tomato, onion and tart lime, and is beautifully paired with a cilantro-sour cream for dipping. Serves eight for less than $0.70 each.

Avocado Toast Pockets

Prep time: 20 minutes

Cook time: 10 minutes

Serves: 8 (5 pockets each)

Ingredients:

• 2 avocados, diced

• 1 plum tomato, seeded and diced

• 1/2 cup (125 mL) frozen corn, thawed

• 1/4 cup (60 mL) minced red onion

• 2 tbsp. (30 mL) lime juice, divided

• 2 tsp (10 mL) chili powder

• 1 garlic clove, grated and divided

• 1/2 tsp (2 mL) salt, divided

• 6 sheets phyllo pastry

• 2 tbsp. (30 mL) salted butter, melted

• 1 egg, lightly beaten

• 2/3 cup (160 mL) sour cream

• 1/2 cup (125 mL) cilantro, finely minced

Directions:

1. Heat oven to 375F (190C). Line two rimmed baking sheets with parchment.

2. Stir together avocado, tomato, corn, red onion, 2 tsp (10 mL) lime juice, chili powder, half the garlic and 1/4 tsp (1 mL) salt in a medium bowl.

3. On clean counter top, place one sheet of pastry. Brush evenly with butter and top with another sheet, smoothing to flatten. Brush second sheet with butter and top with a third sheet. Cut sheet along the long edge into 5 even strips. Cut each strip in half crosswise and in half again to make 4, 3-inch (8 cm) squares. Repeat with remaining strips.

4. Fill one half of each square with 1 tbsp. (15 mL) filling, leaving a 1/2 inch (1 cm) border. Brush border with egg wash. Fold pointed edge of unfilled half over to create a triangle and press firmly to adhere to egg-washed edges. Place on prepared sheet and brush triangles with egg wash. Bake until golden; about 10 minutes. Repeat with remaining pastry sheets and filling.

4. Meanwhile, mix sour cream, cilantro, remaining lime juice, garlic and salt in a small bowl. Serve with pockets.
